you can use a lot of stuff out there. the two main ones I guess are soundforge and Goldwave. at least, they're the two most talked about in the blind community. You should be able to find very good reviews of these (and other ya may be interested in trying out) on the www.acbradio.org site. tab to the "on demand" section, then tab to "main menu" I find this program extremely valueable and by clicking on the page you have access to all the archives. why don't you do a control F (to bring up the find dialog in Jaws) then type digital recording. I honestly can't recall if soundforge has been done, it more than likely has though, but I know that goldwave has definitely been reviewed. Try listening to them. they are really good. But I personally find soundforge is a lot easier to use than goldwave because the commands are more like the windows standard commands, eg. selecting with the cursors, opening files, etc. etc.
But basically what you'd be wanting to do regardless of your sound edditor is plugging the two piece bit of cable from your line-out Jack of your stereo to the Line-in of your computer (obviously there's only the one ended piece of the cable there - I mean, one line-in Jack, single plug. Then record away, making sure the sampling and bit rates are set accordingly.
HTH,
Cheers!
